Solund's nature - is the focus and backbone of our kitchen. We build on the traditions, but strive to renew. We are ambitious and thorough, but will always be playful and exploring. Our cuisine is regional, but we feel inspired by the Mediterranean. We follow the year's time and season's shifts. During the growing season we work intensively with the changing supplies of nature, but also hide as much as we can. We put Solund on glass and make sure that there is Solund nature on the plate all year long. We are constantly exploring and developing raw materials and techniques, both in the kitchen and in the restaurant. We grow or harvest our own herbs, vegetables, fruits and berries, and work closely with our suppliers.
